Update models.py

[vikram-dagger]

1. Updated the Pydantic model BookIn to include a publisher field.
2. Modified test data in test_main.py to include publisher for all test cases.
3. Updated the create_book and update_book functions in repositories.py to handle the publisher field correctly.
