This PR adds support for Python 3.12 and removes support for versions which reached EOL.
This required to update the tensorflow version, which implied:
a) a cumbersome model conversion (hence why the model asset changes).
b) some small changes as the underlying Keras upgrade has a few API breaking changes
Model outputs shouldn't change though as tested in the test suite.
