Create initial documentation structure

After some research, I decided to use Docusaurus v2 to write our documentation.

This PR contains the initial structure with some initial ideas around how to create pages and document components.

Everything is open for discussion :)

Writing all props manually doesn't sound like a good idea, I'll take a look to see if we can generate them based on the component's Props type.

yes that should be a priority because updating it manually would be cumbersome
