Overview
Bumps the SDK release from 0.35.0 to 0.35.1, updating .release-please-manifest.json, package.json, src/version.ts, and CHANGELOG.md.

Removes the Prism-based mock server workflow by deleting scripts/mock and simplifying scripts/test to run jest directly; docs and generated tests are updated to refer to “mock server” and no longer instruct setting up Prism.
