Align Dremio support matrix with versioned-reference coverage

Summary

• add versioned-reference variants to canonical Dremio reference fixtures for CREATE TABLE AS, CREATE VIEW, and INSERT
• update Dremio support matrix notes for rows 15/17/26 to call out versioned-source coverage
• clarify Dremio docs that version clauses are preserved in SELECT, CTAS, CREATE VIEW AS, and INSERT SELECT
