Let's Encrypt stopped sending certificate expiry warning emails a year ago, so this setting is no longer useful.

  • Removes LETSENCRYPT_ACCOUNT_EMAIL from templates, setup scripts, and wizard
  • Let's Encrypt SSL now runs unconditionally when the template is included
  • Also removes MaxMind prompt from new wizard to streamline setup

so there's no need to collect or store this setting anymore.

We should keep the MaxMind stuff somewhere in the documentation so people can add after the fact. But agreed, good call to exclude from initial setup, it's advanced user configuration that 99% of people don't need to think about.
