Aligned the phi symbol in the text (φ) to the symbol used in the plots (ϕ)

This pull request replaces all occurrences of φ (eg. φ<sub>1</sub>) with ϕ (eg. $\phi_1$). This aligns the symbol for the longitude/latitude variables in the texts with the symbol used in the plots (see

). The symbol is also used by the paper, the implementation of the GD1 coordinate reference system, "gala", is referring to (https://arxiv.org/pdf/0907.1085).
