docs(@clack/prompts): document missing prompt APIs in README

Summary

• add README sections for password, date, autocomplete, selectKey, and path
• update the top-level component list so it matches the current public prompt exports
• align the package docs with the prompt APIs currently exported from packages/prompts/src/index.ts
