fyi, these can be entirely ripped out since these DO instances are inactive

Infra: Remove DigitalOcean
f126107 
We've moved our hosting from DigitalOcean to our Kubernetes cluster on
Azure. Removing deployment scripts and supporting docs.

- Removing OpenSearch since Promtail fetches logs directly from the K8s
  instance, so we no longer need log forwarding.
  Mostly reverting https://github.com/Patina-Network/codebloom/pull/718/changes
- Updated docs to remove references to DO.
- Removed redeploy to DO.
