Description
Created a new Entities project in the solution that goes along with the Documentation.

Relates to the PR over in the documentation project.
Changes Made
Created a brand new Entities project under DocumentationSamples. Made sure it's using the latest Monogame + Extended nuget packages. Validated it compiles and works.
