Updated poetry toml file to include the patched version of the following packages to fix multiple vulnerabilities:

setuptools CVE-2025-47273 | High
filelock CVE-2025-68146 | Medium
urllib3 CVE-2025-66471 and multiple linked to the package | Medium

Also, bumped the version to 1.2.1
