fix(ci): fix string interpolation in generated Homebrew formula

This PR fixes string interpolation in the generated Homebrew formula. We replace shell-like ${version} inside double quotes with Ruby-compatible #{version} so that Homebrew evaluates the URL containing the version dynamically rather than failing with bad URI.
