feat: update default Aztec version to v4.3.0#25

Bumps DEFAULT_AZTEC_VERSION from v4.2.0 to v4.3.0, and updates the usage examples in README, tool schema, config docstring, and test script to match. Also corrects the README env-var table, which still showed v4.2.0-aztecnr-rc.2 as the AZTEC_DEFAULT_VERSION default.
