Add summary on notebooks to README

We need to add a section for the enablement to the README. We already have docker-verticapy/enablement)/VerticaPy-Lesson-Series.md, we need to update it and reference it on the main README.md.

We also need to explain what the notebooks in docker-verticapy/notebooks/DataScienceEssentials are for.
