Upgrade dependency to Jackson 3.x

## Description

Please consider upgrading `uom-lib-jackson` to use Jackson 3.0.

As of 30. Nov. 2025 Jackson 3.0 was released and is supported in Spring-Boot 4.x. To allow projects using `uom-lib-jackson` to move forward to Spring-Boot 4.x and Jackson 3.0 it would be great to see Jackson 3.x adapted by it.
