Automatically setup a N8N user

N8N by default will ask you to set a user up and apparently it can no longer be skipped. Add something to the init process to create a default user when the docker is initialized for the first time.

Username: n8n
Password: n8n
email: n8n@example.com

I think there are other parameters that will need setting, need to figure those out, probably take them from an existing step done manually.
