Symfony 8 support

Symfony 8 BETA 1 was released so its time to look into adding support 😊

I'm happy to take a look but wanted to align on the approach first.

• I think we should drop support for Symfony 7.1 and 7.2. So we only support ^6.4 || ^7.3 || ^8.0?
• Should we also drop support for PHP 8.1 already? 8.1 will not receive any security fixes anymore after end of the year. I think while we are on it we should drop support already.
• similar to phpunit I guess we can make changes on devkit for the github actions pipeline and then add support on all affected packages?

I guess we can also do it beginning of next year... but then someone needs to look into it again with PRs and releases etc. Maybe its easier for us if we just do it now in one go 🤔

For most packages we are blocked by SymfonyTest/SymfonyDependencyInjectionTest#165

Also php-cs-fixer is preventing us from using a few Symfony 8 dependencies. But this can be worked around by uninstalling it before we run the tests on CI for now.
