Surface platform docs that need rewrites

A lot of the getting started guides and core concept guides in the platform section need full rewrites to provide more helpful information for new users. Investigate and compile a list of docs that need rewrites, then fit the rewrites into the upcoming sprint

Pages I'd recommend adjusting or rewriting on the platform docs based on my brief review:

• this should be relegated to its own page, as most other businesses hold these on their own, easy to locate page on the sidebar.
• Would also be a good time to include things like us not currently supporting inbound REFER to SWML scripted calls, and I can maybe get support to add some things.

• One of the things that Brian spoke about and has been a problem for a long time is how difficult it is to digest our AI related content. "Is it SWML in our AI, or is it AI in our SWML", etc. Rewriting this page should be the starting point of making the rest of the AI content digestable.

• Genuinely think we either need to remove this or explain that there are (at least from when I last checked) MANY differences between this and what is possible outside of the dashboard.

• this has some info present that is repeated in https://signalwire.com/docs/platform/ai/best-practices . Could use with them being seperated entirely from eachother (Keeping the prompting related practices in prompt engineering and not in the overall AI one)
