Bump notebooks submodule to include color_and_palette tutorial

Bumps docs/notebooks to scverse/spatialdata-plot-notebooks@3e14801 (squash-merge of #4). Resolves the Sphinx 'unknown document' warning that fails the docs build because the gallery card links to notebooks/tutorials/color_and_palette.
