perstistent volumes for generated certs

In the README and example there is no description on if, and how, one should use a persistent volume for the generated certs. This can prevent hitting the regeneration limit on failure scenario's.

This image doesn't support it currently. The idea behind this decision is that you set production when everything works fine in development.

Have you experienced any situations that resulted in reaching the let's encrypt limit due to an error?
