Can you please bump grpc to 1.79.3 and cut a new release?

A few things that would be great here:

• Cutting out a new release, as I think it's been patched via dependabot 🙏
• Having more frequent releases (maybe aligning with openfga/openfga?)
  • They already patched this yesterday
