Clean up SHACL examples from the main repository and move them here

Done for the drafts — all example files have been removed from drafts/1.1.0-draft-0.1/validationFiles/, only the SHACL shapes are kept there (now under shaclShapes/). Examples are now in the validation repo: https://github.com/mobilityDCAT-AP/validation

@marioscrock Done — cleaned up releases/validationFiles/ as well. Removed all *_examples.ttl, individual shape files, Docker setup, and SHACL_TUTORIAL.md. Renamed the folder to shaclShapes for consistency with the other locations:

@Daham-Mustaf renaming folders may break links in the ReSpec page of drafts/releases. Check how the SHACL shapes are referenced there!
