CI for the oldest supported versions

It would be nice if we could provide optional CI workflows to check whether the package works with the oldest supported versions of required dependencies.

The requirements.txt may be generated with uv pip compile --resolution=lowest --only-binary=:all: pyproject.toml

I'm reopening it, because we recently faced problems with this in two projects: LSDB (astronomy-commons/lsdb#632) and nested-pandas (lincc-frameworks/nested-pandas#227).

In the previous comment I provide a straightforward way to generate a requirements.txt for that. In the copier prompt I'd make a question like this:

Run tests with the lowest versions of the dependencies. Recommended if you are developing a library
[x] Do not test with lowest versions of dependencies
[ ] Test with lowest versions of direct dependencies only (those listed in pyproject.toml)
[ ] Test with lowest versions of all dependencies
