Replace the yup validation dependency with zod. Zod has a more broad adoption base and the same features as yup.

Provide clear acceptance criteria to validate the story is complete.

GIVEN that yup has been replaced with zod throughout the app
WHEN using the application
THEN there should be no detectable difference

(i.e. perform a full regression test)
