The latest version of the module (4.2.0) has a problem in this method:
\Experius\EmailCatcher\Model\Emailcatcher::saveMessage
it will throw an error
main.ERROR: Call to undefined method Magento\Framework\Mail\Message::getTo() [] []
I would recommend to update the composer dependencies, thus noone can run into troubles anymore.
