Executable's icon

After extracting the Windows build from the latest release, the core.exe file uses the default PyInstaller(?) icon. I suggest updating it to use the CORE logo.

We should use the icon from here: https://www.cdisc.org/sites/default/files/2021-06/CORE_logo_sm.png
We should also update the logo in the readme to use the core logo instead of the cdisc logo:
