Using enable_pauses will continue to accept incoming jobs but not executing them?

I am trying to find a way to put our app in maintenance without causing issues receiving Incoming webhooks from payment gateways, etc. Using enable_pauses can help with that? Could I keep the workers running good job but pause the queues? Meaning: I would still schedule jobs, but they will only be executed once I "unpause/resume" the queues after a period of time.

Correct. The "pause" functionality does not affect enqueuing jobs. It only prevents the job record from being dequeued and performed.
