Create a backup process for the data volumes

Requirements:

• Store most recent copy of the backup on the server.
• Ensure the most recent back up can also be launched as a dedicated data volume
• Store a weeks worth of backups in some sort of S3-like object store (whatever Digital Ocean provides)
