Preparing metadata (pyproject.toml) did not run successfully - during Open Echo Interface Software Setup.

When following the "Getting Started Open Echo Interface Software" setup instructions for a Raspberry Pi 5 and I get the error message "Preparing metadata (pyproject.toml) did not run successfully" after running "pip install -r requirements.txt " As a result none of the packages in the requirements file install.

I hadn't realised pip install -r requirements.txt would even look at pyproject.toml.

Fortunately, my PR #17 to create and publish a pypi package removes the requirements.txt file, and updates the docs to use uv for development, so I think we can probably safely ignore this
