Bitnami postgres image is unsupported

The docker container we use for out postgreSQL image is now considered legacy and bitnami seems to be moving to a paid subscription model for their hardened images as per bitnami/containers#83267. The postgresql image we use will still be available via bitnamilegacy/postgresql:17 but will not be receiving updates, thus we should migrate to another solution.

I wonder if we could just swap in the official docker postgres image?

We switches to bitnami version since it supports POSTGRESQL_FSYNC and POSTGRESQL_REPLICATION_USE_PASSFILE that improves CI performance.

This should also work:

        env:
          POSTGRES_USER: hypha
          POSTGRES_PASSWORD: hypha
