Add Privacy-respecting Analytics

We want to know how people use our site:

• which pages are popular
• which UI elements are used over others
• etc

so that we can make changes for a better user experience. We are not interested in who is using the site, so it's important to pick an analytics tool which will only capture interaction patterns to provide feedback for development.

I used to work at a startup company that self hosted "Plausible" on a vps. The lead developer was also pretty concerned about privacy, to the point that he wanted to make sure the analytics where never any anyone else's system. To my understanding, Plausible doesn't even set browser cookies. They claim to be privacy respecting.

They have a cloud subscription, as well as a community edition that can be easily run on any system via docker.

I haven't personally worked with it, but I think that's an option worth looking into.
