Add unit tests for `to_xy_arrays`

Handle the TODO issue on #45 (that PR was merged without this being done yet):

• Add unit tests of to_xy_arrays that check a number of different possible data types for X and y (see data structures list here - Custom estimators / sklearn / dask and data structure flexibility checklist elm#202)
